ZUCCHINI BREAD 
3 eggs
1 c. sugar
1/2 c. Wesson oil
1 c. shredded zucchini
1 1/2 c. self rising flour
1 tsp. vanilla
1/2 tsp. cinnamon

Beat 3 eggs in a large bowl, then add all of the other ingredients and stir well. Use a mixer to finish mixing the batter, and pour the batter into a greased pan and bake at 350 degrees until done. Serve hot or cold.
