ICE CREAM WATERMELON DESSERT | |
1 plastic lettuce crisper or oval shaped mold 1 qt. lime sherbet 1 qt. strawberry or raspberry ice cream or sherbet (without fruit) 1 c. semi-sweet chocolate chips Line slices, mint leaves, strawberries (optional) Spread lime sherbet along sides of lettuce crisper, making 1 to 1 1/2 inch thick along sides, leaving a cavity in center (this is the rind). Fill center cavity with strawberry ice cream or sherbet, adding chocolate chips (the seeds) randomly. Chill in freezer for at least 6 hours. When ready to serve, place warm towel around mold until ice cream slips out. It should resemble a watermelon half. Garnish with lime slices, leaves, and strawberries on a platter. To serve, slice off individual servings, just as you would with real watermelon. |
