MARINATED BARLEY-VEGETABLE SALAD 
1/2 c. pearl barley
1 c. frozen peas, thawed
4 oz. cooked turkey breast, cubed
1/2 c. chopped red or yellow pepper
2 green onions, sliced
2 tbsp. olive oil or salad
1/2 tsp. shredded lime peel
2 tbsp. lime juice
1/4 tsp. salt
1/4 tsp. poultry seasoning
Dash ground red pepper

Cook barley according to directions; drain and rinse. In a large mixing bowl, combine barley, peas, turkey, pepper and onion.

For dressing combine oil, lime peel, lime juice, salt, poultry seasoning and ground red pepper in screw top jar. Shake. Pour over barley mixture. Toss to coat. Cover and chill 4 hours or overnight. Serves 6.
