BLACKBERRY JAM 
1 1/2 qt. fully ripe berries or fresh frozen blackberries
5 1/2 c. sugar
2 tbsp. lemon juice
1 box Sure Jel
3/4 c. water

Completely crush berries. Mix sugar well with berries; add lemon juice. Mix Sure Jel and water in a suace pan. Bring to boil; boil for 1 minute, stirring constantly. Stir into fruit mixture. Continue stirring and cooking for 2 minutes more. Cool for 5 minutes. Stir; skim by turns, 5 minutes to prevent floating fruit. Ladle into jars. Leave 1/4 inch head space; adjust caps. Process for 15 minutes in boiling water bath. makes about 3 to 4 pints.

Berries such as Blueberry, Boysenberry, Dewberry, Gooseberry, Loganberry, Raspberry or Youngberry may be used instead of Blackberries.
