CHICKEN CASSEROLE WITH PINEAPPLE 
5 tbsp. butter or fat
2 (2 lb.) fryer chickens, quartered
Salt to taste
1/2 c. pineapple juice
1 c. cubed pineapple
2 thinly sliced lemon
1/2 c. pineapple juice
1 c. toasted almonds
1/2 c. pineapple juice

Melt the butter in skillet and brown the chicken well on all sides. Salt to taste. Glaze the chicken in a casserole with pineapple juice. Cover and bake at 350 degrees for 25 minutes. Add the cubes pineapple, lemon slices and pineapple juice; and bake 15 minutes. Add the almonds and pineapple juice. Uncover and bake 5 minutes. Makes 4 servings.

Serving Suggestion: Good with baked sweet potatoes.
