GOLDEN CHRISTMAS BREAD 
3 beaten eggs
1/2 c. cooking oil
1/2 c. milk
2 1/2 c. sifted flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
2 c. shredded carrots
1 (10 oz.) jar maraschino cherries
1 c. raisins
1 c. chopped pecans

Combine beaten eggs, oil and milk in large bowl. Sift together flour, sugar, baking powder, soda, cinnamon and salt. Add egg mixture. Mix just until thoroughly combined. Stir in carrots, cherries, raisins and pecans. Turn into well greased and floured bread pans. Bake in 350 degree oven for 45 or 50 minutes. Remove from pan. Cool. Wrap in foil and refrigerate overnight or until used.
