BREAD PUDDING 
1 tbsp. butter
7 c. bread cubes
2 c. milk
2 eggs
1 c. sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. light brown sugar
1 tbsp. vanilla flavor
1/2 c. raisins

In a 1 quart saucepan, heat milk and butter until warm, pour over bread. In large bowl, combine sugar, cinnamon and eggs, mixing until blended. Add nutmeg and vanilla, spoon bread mixture into greased 8-inch square baking dish, place raisins over pudding and then sprinkle nutmeg on top. Set baking dish into shallow pan. Pour boiling water into pan, about 2 cups. Bake at 350 degrees for 50 to 60 minutes or until knife inserted in the center comes out clean. Remove from water and cool before serving. Makes about 6 servings.
