TURKEY ENCHILADA 
2 c. cooked turkey, shredded
2 c. grated Cheddar cheese
1 med. onion, chopped
1 can enchilada sauce, mild
1 can green chilies, chopped
10 corn or flour tortillas
1 can black olives

Place 2 large tablespoons of turkey, 1 tablespoon cheese, 1 tablespoon onion, 1 teaspoon chilies and 1 tablespoon enchilada sauce in a tortilla. Roll tortilla with ends open and place in a 9x12 inch baking dish. Continue with rest of tortillas, and place side by side in dish.

Sprinkle remainder of cheese and enchilada sauce on top of rolled tortillas. Garnish with olives. Bake in oven at 350 degrees for 45 minutes. Great way to use leftover turkey after Thanksgiving.
