OAT BRAN MUFFINS 
1 1/4 c. Oat bran
1 c. wheat flour
1 tbsp. baking powder
1/2 tsp. salt, optional
1/4 c. chopped nuts or sunflower seeds
1/4 c. raisins
3/4 c. milk
2 eggs, beaten
1/2 c. honey
2 tbsp. vegetable oil or olive oil

Heat oven to 425 degrees. Grease bottoms only of 12 medium size muffin cups. Combine dry ingredients. Add mixture of milk, eggs, honey and oil. Mix just until dry ingredients are moistened. Fill prepared muffin cups 3/4 full; bake at 325 degrees for 12-17 minutes or until golden brown. (You may use paper muffin baking cups.)
