PEACH UPSIDE DOWN CAKE 
1/4 c. butter
1/2 c. brown sugar
3 1/2 c. canned peaches

Melt butter in baking pan (I use my big iron skillet). Sprinkle with brown sugar and place peach halves upside down in this.

BATTER:

3 eggs, separated
1 c. sugar
1/2 c. peach juice
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt

Beat yolks until lemon colored. Beat in sugar, juice and vanilla. Fold in dry ingredients that were sifted together. Beat whites and fold in. Pour over peaches and bake at 350 degrees for 40 to 50 minutes. Let set a few minutes before removing. Brown sugar will run down sides. Can use other fruits pineapple.
