PEACH UPSIDE DOWN CAKE | |
1/4 c. butter 1/2 c. firmly packed brown sugar 1 qt. canned peaches, drained 1 1/4 c. flour, sifted 3/4 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1/4 c. shortening 1 egg 1 tsp. vanilla Heat oven to 350 degrees. Melt butter in a 9 inch cast iron skillet. Blend in brown sugar. Arrange peach slices in pan. Blend remainder of ingredients in bowl and mix on low speed for 1 1/2 minutes. Add egg and vanilla, blending another 1 1/2 minutes. Spoon batter over fruit. Bake 40-50 minutes. Cool 5 minutes; loosen with a spatula and invert on a plate. Serve warm or cold with whipped cream, if desired. Serves 8. |
