PARSLEY BEEF IN BRANDY 
1 1/2 lbs. London Broil, gashed
6 cloves garlic, sliced
20 black peppercorns, crushed
1/3 c. lemon juice
1/4 c. brandy
2 tbsp. butter
Parsley, chopped

Preheat oven to 325 degrees. Place beef in casserole. Insert garlic in gashes. Sprinkle crushed peppercorns over meat. Pour lemon juice and brandy around meat. Cover and bake 1 1/2 hours, turning meat occasionally. Sprinkle parsley over all. Bake uncovered 20 minutes more. Dot meat with butter, bake, uncovered, 5 minutes more. Salt free - add salt to meat if desired.
