ZUCCHINI PICKLES 
7 firm zucchini, the circumference of a 25 cent piece, unpeeled and sliced about 1/4 inches each
1 c. thin sliced onion
1 med. green pepper, sliced thin
1 c. cider vinegar
1 c. sugar
1 tbsp. celery seed

Use only a crockery or glass bowl, NEVER metal of any kind. Put vegetables in large bowl; sprinkle with salt. Let stand for 2 hours. Then strain. Bring liquid ingredients to a boil. Pour over sliced mixture and let stand in refrigerator 2-3 days, or can be frozen. These are easy to make, but hard to keep!
