MIRLITON PIE 
Boil 2 regular size mirlitons until very soft; cut in half. Discard seed and cut off any hard parts.

2 boiled mirlitons
1 c. sugar
1 c. Bisquick
2 eggs
1 tbsp. vanilla
1/2 stick butter, melted

Blend all real good and pour into a dry pie dish. Bake in a 350 degree oven for approximately 50 minutes. You'll know it's done when the top slightly cracks open and browns.
