PINEAPPLE RICE 
1 c. rice
2 1/4 c. clear, fat-free chicken broth
Salt to taste
2 tbsp. butter
8 oz. can chunk pineapple, drain and thinly sliced
1/4 c. golden raisins, soaked in pineapple juice until plump

Cook rice as to directions but use chicken broth instead of water. Stir in all other ingredients. Serve hot.
