SEAFOOD RICE 
2 cloves garlic, chopped fine
1 med. yellow onion, chopped
1 green pepper, chopped
1 tomato, chopped
Scallops or prawns
2 - 2 1/2 c. rice (cooked)

Saute garlic in hot oil (use wok or heavy skillet). Add onion and green pepper and saute for few minutes. Add seafood. Add tomato and the rice. Let cook a minute. Season with Tabasco or Worcestershire sauce, salt and pepper. Just before serving add 1 tablespoon rice vinegar.
