SCALLOPED EGGPLANT | |
1 medium eggplant 1 beaten egg 1/2 cup milk 2 tbsp. melted butter 1 onion 1 cup dry bread crumbs 1/2 cup buttered bread or cracker crumbs 1/2 cup grated cheese (optional) Pare eggplant, cut in 1-inch cubes. Cook in boiling water 8 minutes, drain. Add eggs, milk, onions and dry bread crumbs. Place in baking dish. Top with buttered bread crumbs. Bake at 350°F for 30 minutes. Remove from oven, sprinkle with grated cheese, if desired. Put back in oven just until cheese melts. |
