GREEN TOMATO CASSEROLE 
4 lg. green tomatoes, diced
1 lg. red onion
1 med. eggplant (optional)
1 1/2 c. grated cheese (your choice)
1/4 c. bread crumbs
Salt and pepper to taste

Layer in slightly greased baking dish, tomatoes, onion, cheese and eggplant (optional). Top with bread crumbs and cheese. Bake 1 hour in 325 F. oven.
