1 gal. cucumbers 1 c. salt 1 gal. vinegar 3/4 c. alum 1 box pickling spice sugar boiling hot water Wash and place whole cucumbers in glossy stone jar. Put salt in 1 gallon boiled water. Pour over cucumbers and let stand for 24 hours. Pour off brine; add powdered alum to 1 gallon hot water. Let stand 24 hours. Pour off water. Add 1 gallon hot clear water and let stand 24 hours. Pour off water. Boil 1 gallon of vinegar with spices. Pour over cucumbers and let stand 9 days. Remove cucumbers from vinegar. Slice in round slices. Place in jars; alternate layer of cucumbers with layers of sugar. |
