WESTERN LIMA BEAN BAKE 
1 lb. dried lima beans
1/2 lb. ground beef
1 med. onion, chopped
3 tbsp. bacon fat
2 cans tomato sauce
1/2 c. lima cooking liquid
1/2 tsp. salt
1 tbsp. brown sugar
Dash of poultry seasoning

Wash beans and soak overnight in 2 quarts water. Simmer until tender 1 1/2 hours. Season beans with 2 1/2 teaspoons salt after first hour of cooking.

Drain, place in casserole reserving 1/2 cup liquid.

Cook meat and onions in hot bacon fat until light brown. Add tomato sauce and remaining ingredients. Mix thoroughly. Pour over the beans. Bake at 350 degrees for 1 hour.
