BUTTER OF THE POOR 
4 tomatoes, diced
4 avocados, diced
2 bunches green onions, sliced thin
1 tsp. salt
2 tbsp. cilantro (optional)
2 tbsp. vegetable oil
1/3 c. red wine vinegar

Mix everything together at least 1 hour before serving. Refrigerate. Wonderful appetizer with tortilla chips or crackers.
