ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar, granulated
1 tsp. vanilla
2 1/2 c. grated zucchini, peel if desired
3 c. flour
1 tbsp. cinnamon
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts, if desired

Beat eggs until foamy (use a large bowl). Add oil, sugar, vanilla, and mix well. Stir in zucchini. Combine dry ingredients and mix well in separate bowl. Fold into bowl with wet ingredients.

Pour into well greased and floured bread pans (3 foil). Bake at 325 degrees for approximately 1 hour. Toothpick in center will be clean.

I usually use zucchini from my garden, and triple recipe making 9 foil pans. The bread freezes very well, not drying out at all.
