MEAT LOAF WITH PECAN STUFFING 
1 1/2 lbs. ground beef
1/2 c. chopped green pepper
1/2 c. chopped onion
1 tsp. salt
1 tbsp. Worcestershire sauce
1 c. white bread crumbs
1/2 c. milk
2 eggs
1/4 c. fat
2 c. whole wheat bread crumbs
1/2 c. chopped celery
1/4 tsp. black pepper
3/4 c. meat stock or water
1/2 c. chopped pecans

Combine beef with green pepper, onion, salt, sauce, white bread crumbs, milk and 1 egg. Mix thoroughly. Place 1/2 of this mixture in bottom of greased loaf pan. Combine 1 egg, fat, whole wheat bread crumbs, celery, black pepper, and meat stock or water. Add to this chopped pecans, mix thoroughly.

Spread on top of meat mixture. Arrange remaining meat mixture on top of pecan stuffing. Bake at 350 degrees for 1 1/2 hours and cool slightly before removing from pan. Serves 10.
