CREAMED ONIONS & PEAS 
2 lbs. pearl onions, about same size
2 tbsp. butter
2 tbsp. all-purpose flour
Salt & pepper to taste
Pinch of nutmeg
1 c. milk
1 c. green peas, fresh or frozen

Peel onions and cut a small cross at root end of each. Place onions in a 3 quart saucepan, cover with water and cook until tender. Drain well.

In medium saucepan melt butter. Stir in flour and cook for 1 minute over low heat. Season with salt, pepper and nutmeg to taste. Gradually stir in milk and cook over medium heat until thickened. Add onions and peas and simmer 5 minutes. Makes 8 servings.
