IRON SKILLET APPLE CAKE 
2 c. peeled, cored & chopped apples
1 1/2 c. flour, plain
1 c. sugar
3/4 c. cooking oil
1 egg, beaten
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. vanilla
1 c. pecans

(May use self-rising flour, leaving off salt and soda.) Combine all ingredients, mixing well (do not use mixer). Pour into lightly greased #8 iron skillet and bake at 350 degrees for 45 minutes. 14 to 16 servings.
