4 slices onion
1/2 stick butter
1 (14 1/2 oz.) can Cajun style stew tomatoes
Seasoning salt

Over medium heat in a large skillet, melt butter. Add pork chops and enough water to cover chops. Cover and simmer until chops are fork tender, turning every 10 minutes until done. When chops are done, remove top and cook until water is about gone. Put heat to low. Put 1 slice onion on each chop. Season with seasoning salt. With spoon, put tomatoes on top of each chop. Pour juice in pan. Cover and simmer 15 minutes.

NOTE: Can be made with original or Italian style stew tomatoes.

I have been cooking at home for 50 years Italian, Chinese, and just Canadian. I always thought Cajun was complicated, until I came across your website and examined a few recipes. I am going to start tonight. My wife is Celiac, soy intolerant and diabetic, but your recipes can be modified with ease. I am pleased to come across your domain.

Terry
