MANICOTTE 
4 eggs
1 c. water
1 c. flour
Salt

FILLING:

1 lb. cottage cheese
1/2 lb. Mozzarella cheese, grated
3-4 eggs
3/4 c. chopped parsley
1 1/2 tbsp. Italian cheese
Spaghetti sauce

Mix dough with mixer, use teflon pan. Make one at a time, do not brown, only cook until shiny on top. Pack with wax paper between and freeze.

Filling: Mix together cheeses and eggs, add parsley. Put 1/2 cup spaghetti sauce in bottom of glass dish. Place about 2 tbsp. filling in center of dough "pancake". Roll up, place split side down in dish, repeat. Cover with spaghetti sauce and bake at 350 degrees 30-45 minutes. Cover with foil before baking. Can be frozen.
