SKILLET CORNBREAD 
1/3 c. butter
1 1/4 c. cornmeal
3/4 c. flour
1 tbsp. baking powder
1 tbsp. sugar
1/2 tsp. salt
1 egg, slightly beaten
1 c. milk

Melt butter in skillet, enough to coat. Mix other ingredients. Stir in egg and milk. Bake about 20 minutes or until golden brown and springy.
