CHEESE BAKED HADDOCK 
1 lb. haddock fillets
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
Paprika
1/8 tsp. pepper
2 c. milk
1 c. (4 oz.) shredded cheddar cheese
1/4 tsp. mustard

Place fish in greased baking dish. In saucepan melt butter, stir in flour, salt, mustard and pepper. Add milk gradually, cook, stirring until thickened. Add cheese, stir until melted. Pour over fish. Sprinkle with paprika. Bake in 350 degree oven for 25 to 30 minutes or until fish flakes easily.
