BANANA BREAD 
1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. applesauce
1 c. sugar
1 1/2 egg whites
1 tsp. vanilla
2 c. very ripe mashed bananas (5 to 6 medium)

Combine flour, baking powder, baking soda and cinnamon. Whisk together applesauce, sugar, vanilla, egg whites and bananas. Add flour mixture all at once and mix gently. Pour into Teflon 9 x 5 loaf pan.

Bake at 350°F for 40 to 45 minutes. Cool completely before slicing.
