GRANDMA'S CUSTARD PIE 
4 eggs, slightly beaten
1/2 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
2 1/2 c. scalded milk
Nutmeg, optional
9" deep dish pie crust shell

Combine first 4 ingredients, mixing well. Pour 1/4 cup scalded milk into egg mixture. Stir well, then slowly add rest of milk, stirring constantly. Pour mixture into 9 inch deep pie crust shell. Sprinkle with nutmeg, if desired.

Bake at 400 degrees for 20-25 minutes. Do not overbake, as this makes the custard watery. Hint: Lemon can be substituted for vanilla for a slightly different flavor.
