VINEGAR PIE PASTRY
4 c. sifted flour
1 tbsp. sugar
1 1/2 tsp. salt
1 1/2 c. lard or solid shortening
1 egg, beaten
1 tbsp. white vinegar
1/2 c. cold water

Blend flour, sugar, and salt. Cut in lard until particles are pea size. Combine egg, vinegar, and water. Sprinkle over flour mixture a tablespoon at a time, mixing with a fork. Form dough into a ball, divide into 4 sections and roll out as usual. Makes 4 9-inch pie shells. May freeze pie pastry sections wrapped in wax paper and sealed in wrap. Freezes very well.
