GREEK CHICKEN WITH FETA 
1/2 lb. Feta cheese, sliced
1 cut up fryer, skinned
1 tbsp. plus 1 tsp. olive oil, divided
4 med. onions, sliced
2 lg. cloves garlic, minced
1 (16 oz.) can tomatoes with liquid, chopped
1 tsp. oregano
1/4 tsp. salt (if desired)
Fresh ground pepper to taste

Place Feta in a bowl of water and set aside (to remove salt). Heat 1 tablespoon oil in skillet and brown chicken on all sides over moderate heat. Remove to platter.

Add teaspoon oil and onions to pan. Stir 10 minutes. Add garlic. Cook another 5 minutes still over moderate heat. Add tomatoes, their liquid, oregano and stir.

Place browned chicken on sauce, sprinkle with salt if desired. Cover. Simmer 30 minutes. Arrange Feta on top of chicken, cook 15 minutes. Serve over spinach or egg noodles.
