TIM'S FISH SOUFFLE 
1/3 c. butter
1/2 c. flour
2 c. milk
4 eggs
2 c. cooked fish
Salt, pepper, garlic thyme, etc.

Melt butter. Stir in flour smoothly for 2 minutes. Add milk slowly, stirring all the time. Cook for 5 minutes and let it cool. Beat egg yolks and add flaked fish. Season with salt, pepper, etc.

Beat egg whites stiff and fold into fish. Turn into baking dish which has been buttered. (You can sprinkle bottom of dish with bread crumbs, too.) Set baking dish in a shallow pan of hot water. Bake at 350 degrees for 40 minutes. Serve at once.
