3 eggs 2 c. milk 2 tbsp. sugar, more or less Dash of salt 1 c. flour Enough flour to make a real thin batter, about 5 tbsp. or 1/3 c. for each egg 1/4 c. melted butter Beat eggs well in blender. Then add milk and heat well again before adding the flour and sugar. More sugar won't hurt, but don't get the batter too thick. Pour on griddle, medium high heat. Batter will be thin. You might need to play with this a few times to get it down. You can't miss, serve rolled with jam, brown sugar, powdered sugar and cinnamon; or lemon juice, or syrup. It's good any time and works for unexpected guests very well. (I use the butter in the griddle to cook it on, but you might add some to the batter.) |
