SHRIMP JAMBALAYA 
1 lb. (fresh or frozen) cooked shrimp
1 c. finely chopped onion
1/2 c. green onions, chopped
2 to 4 cloves garlic, minced
1/2 c. butter
2 tbsp. flour
3 c. water
1 (8oz.) can tomato sauce
2 bay leaves
1 tbsp. Worcestershire sauce
1/8 tsp. hot sauce
1/2 tsp. allspice
1 tsp. salt
1 tsp. sugar
1/2 tsp. thyme
1 lemon slice
1/2 tsp. parsley
1/2 tsp. Italian seasoning

Cook onions and garlic in butter until soft. Blend in flour, add water, tomato sauce and other ingredients except shrimp. Simmer uncovered until reduced by 1/2. Add shrimp. Heat thoroughly. Serve over rice.
