APPLESAUCE CAKE 
1/2 c. oil
3/4 c. honey
2 c. apple sauce
2 c. flour
1/2 tsp. salt
2 tsp. baking soda
1 c. chopped nuts (optional)
1/2 c. raisins (optional)

For spice cake add:

2 tsp. cinnamon (optional)
2 tsp. nutmeg (optional)
1/2 tsp. cloves (optional)

For chocolate cake add 3 tablespoons cocoa or carob.

Heat oven to 350 degrees. Measure oil into large mixing bowl, then measure honey, it will slip out easier. Mix and add applesauce. In a separate container mix flour, salt and soda also any optional ingredients. Slowly add the dry ingredients to the applesauce mix. Blend only until flour disappears. Fill lined cupcake pans 3/4 full. Makes about 24. Cook 25 minutes or until toothpick comes out clean or 9"x13"x2" baking dish for 30 minutes.
