ZUCCHINI PANCAKES 
3 c. zucchini
2 lg. onions, chopped fine
3 eggs
1 1/2 c. Bisquick
2 tsp. oregano
1/2 c. fresh parsley or 3 tbsp. dried
1/4 c. fresh basil or 2 tbsp. dried
3/4 c. grated Parmesan

Mix all ingredients together. If too thick add a little water. Drop into hot skillet. Make them about 2" to 3". Brown on both sides. Serve with jelly, applesauce or syrup.
