ELAINE'S PEACH SALAD | |
1 lb. can peaches, drained and chopped fine 1 sm. can crushed pineapple, drained 1 lg. pkg. orange Jello 2 c. boiling water 1 c. combined peach and pineapple juice 1 c. miniature marshmallows Drain and chill fruits. Save all juices. Dissolve Jello in the boiling water. Add 1 cup of the juice. Chill until slightly congealed. Fold in the fruits and marshmallows. Pour into 13x9x2 dish. Chill until firm. Spread with topping: 5 tbsp. flour 1 egg 1 c. juices 2 tbsp. butter 2 c. Cool Whip 1/2 c. grated Cheddar cheese Combine sugar and flour, blend in egg. Gradually stir in juice. Cook over low heat until thickened, stirring constantly. Remove from heat. Stir in butter and cool completely. Add Cool Whip and spread over the gelatin. Sprinkle with cheese. |
