CINNAMON CANDY 
2 c. white syrup
4 c. white sugar
1/2 c. boiling water
1 tsp. red food coloring
1 tsp. cinnamon oil (or sm. bottle) - purchased from any pharmacy

Mix the first 3 ingredients in a large heavy saucepan. Stir over medium heat until the sugar dissolves. Boil without stirring, until the temperature reaches 310 degrees or until drops of syrup form hard and brittle threads in cold water. Remove from heat. Stir in 1 teaspoon red food coloring and 1 teaspoon cinnamon oil. Pour into a buttered 10 x 15 inch cookie sheet. Cool; break into pieces. Store in an airtight container.

Other flavors and food coloring may be substituted. Lemon flavoring with yellow coloring; orange flavoring with orange coloring; cherry flavoring with red coloring.
