EGGPLANT PARMESAN 
2 eggplant
Italian tomato sauce, lg. jar
3 beaten eggs
Flour
Bread crumbs, with your choice of Italian seasoning
1 lb. grated Mozzarella cheese
1 c. Parmesan cheese

Slice eggplant into 1/2" thick slices. Dredge into flour then beaten eggs, then bread crumbs and place on lightly oiled cookie sheets. Bake 25 minutes at 350 degrees. Remove from cookie sheet and layer eggplant, sauce and cheeses, ending with Parmesan. Bake 40 minutes, uncovered for last 15 minutes at 375 degrees. Let stand 10 minutes before serving.
