TORTELLINI SOUP 
26 oz. broth (vegetable, bean, or chicken)
16 oz. Italian style stewed tomatoes
10 oz. frozen spinach or 1/3 pkg. fresh
1 pkg. tortellini
1 onion, chopped
2 cloves garlic, chopped
1-2 tbsp. olive oil
Basil, pepper, oregano, chopped fresh parsley
Optional: Croutons, grated Parmesan

Saute onion and garlic in oil. Do not brown - changes the flavor. Add broth and bring to a high simmer. Add tortellini and cook on high for 5 minutes. Add tomatoes, parsley, and spinach; simmer 5 more minutes. Optional: Garnish with croutons and Parmesan cheese.
