6 slices beef loin tenderloin steak (1 1/2 inch thick) Salt and pepper 1/2 c. butter 1/4 c. flour 3/4 c. dry white wine 1/2 c. chopped parsley Juice of 1 lemon Season meat with salt and pepper on both sides. Melt butter in heavy skillet. Next add meat and brown quickly on each side. Remove to dish. Using a whisk, stir flour into pan juices. Cook stirring constantly over low heat for 2 minutes. Stir in wine and cover. Simmer for 5 minutes. Add meat, parsley and lemon juice. Then simmer for 5 minutes. Makes 6 servings. |
