VIDALIA ONION CASSEROLE 
2 c. saltines or Ritz crackers, crushed or mix them
1 1/4 sticks butter
3 large sliced Vidalia onions
2 eggs, beaten
2 tbsp. flour
1 c. evaporated milk

Pour 1/4 of melted butter over cracker crumbs. Sauté onions in remaining butter. Layer crumbs and onions, ending with crumbs. Mix eggs, flour and milk; pour over onions and cracker crumbs. Top with grated cheese and bake at 350°F for 45 minutes.
