APPLE CAKE WITH CINNAMON
FROSTING
 
1/4 c. butter
1 egg
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1 c. sugar
1 1/4 c. flour
3 c. apples, peeled and sliced
1/2 c. walnuts

Place butter, sugar and egg in mixing bowl. Stir in flour, soda, salt and cinnamon. Add apples and nuts; mix. Batter will be stiff.

Spread evenly into ungreased 9x9 glass dish. Microwave on HIGH 11-12 minutes; rotate several times. Let stand 10 minutes.

FROSTING:

2 tbsp. butter
Dash salt
1 egg white
2 tbsp. sour cream
1/2 tsp. cinnamon
2 1/4 c. powdered sugar

Place butter in bowl; microwave on HIGH 1 minute. Add sour cream, cinnamon, salt and mix until smooth. Stir in egg white. Gradually add powdered sugar and beat until smooth. Add more or less powdered sugar for consistency desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
