TWO CRUST LEMON PIE 
1 1/4 c. sugar
2 tbsp. flour
1/8 tsp. salt
1/4 c. butter or soft butter
3 eggs, well beaten (reserve it egg white for crust)
1 tsp. grated lemon rind
1 lemon sliced thin paper thin slices

1. Mix sugar, flour and salt.

2. Blend in butter.

3. Add eggs.

4. With 1/2 cup water, add lemon rind and lemon slices to sugar mixture. Blend well.

5. Pour into unbaked pie shell.

6. Cover with top crust. Spread with reserved 1 teaspoon egg whites.

7. Bake at 400 degrees for 30-35 minutes.
