FRESH APPLE CAKE 
2 eggs
4 c. peeled diced apples
2 c. sugar
2 tsp. cinnamon
1/2 c. salad oil
1 c. chopped nuts
2 c. flour
1 tsp. salt
2 tsp. baking soda
Raisins, optional

Break eggs over apples and stir. Add sugar, cinnamon, oil and nuts. Sift flour with salt and soda. Mix with apple mixture and beat well. Pour into greased 9 x 13 inch pan. Bake at 350 degrees for 1 hour. (Batter will be quite stiff.)

FROSTING:

1 stick butter
1 egg
Powdered sugar
1 tsp. vanilla
1 tsp. instant coffee diluted with 1-2 tsp. hot water

Cream butter, egg and enough sugar to make desired consistency. Add vanilla and coffee. Spread over cooled cake.
