FUNNEL CAKES 
2 c. flour
1/4 c. sugar
1/4 tsp. salt
1 tsp. baking powder
2 eggs
1 c. milk

Sift flour, sugar, salt, baking powder together. Beat eggs and add milk. Add dry ingredients to egg milk mixture. Beat batter until smooth and thin enough to run through a funnel. Drop from funnel into 1 1/2 inches of hot oil 370 degrees holding finger or spoon over end of funnel to control amount of batter.

Start in center of pan swirling batter outward in a circle. Fry until golden brown. Remove from oil and drain. Sprinkle with powdered sugar and serve hot.

Makes about a dozen cakes.
