APPLE GINGERBREAD COBBLER | |
4 med. apples, pared, cored and sliced (4 c.) 1/2 c. packed brown sugar 1 tbsp. lemon juice 1/4 tsp. cinnamon 1/4 c. granulated sugar 1 egg 1/2 c. buttermilk 1/4 c. molasses 2 tbsp. cooking oil 1 c. all-purpose flour 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. ginger 1/4 tsp. nutmeg 2 tsp. cornstarch Combine apples, brown sugar, 1 cup water, lemon juice and cinnamon. Cover and cook until apples are tender. Beat together granulated sugar, egg, buttermilk, molasses and oil. Sift together flour, baking soda, baking powder, spices and 1/4 teaspoon salt. Add to egg mixture and beat until smooth. Combine cornstarch and 1 tablespoon cold water. Stir into apple mixture. Pour into a 1 1/2 quart casserole. Spoon gingerbread mixture atop. Bake in 350 degree oven 30 minutes. |
