BANANA COOKIES 
3/4 c. shortening
3/4 c. sugar
1 egg
1 tsp. vanilla
1 tsp. cinnamon
2 ripe bananas, mashed
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
3/4 c. oatmeal
1/2 c. nuts, chopped
1/2 c. raisins

Preheat oven to 375 degrees. Cream together shortening and sugar until creamy. Beat in egg, vanilla, cinnamon and bananas, mix well. Add flour, soda and salt, mix well. Add oatmeal, mix well. Stir in nuts and raisins. Drop by teaspoonfuls onto ungreased baking sheets. Bake 8 to 10 minutes until light golden brown.
